...It all began in 1974, when Evilasio Galán, the second son of a Salamanca family, arrived in Madrid, where he learned the trade of a delicatessen chef and, together with his younger brothers, opened his first delicatessen in Móstoles. He soon set himself apart from the rest by turning the establishment into a benchmark for the quality of its products, expanding its offerings and services, which, along with subsequent generations, would improve and consolidate, making "Las Salmantinas" a synonym for prestige.
